It seems you can extend your season ticket / Kombi ticket from one of the VRR, VRS, AVV and Westfalen areas to for just 6.80 per journey.

And a tourist can potentially get one of the Kombi tickets through a football match / concert / hotel stay.

Any pitfalls here for the tourist?

Judging by the brochure, the hotel stay tickets may not be included. Other than the Kombitickets, it's only in combination with weekly (or longer) tickets.

On a random check (using Düsseldorf, other cities are available :)) the relevant KombiTicket is the DüsseldorfCard which you pay for, not the free travel card that is paid for out of visitor tax in many parts of Germany - so check what the hotel offers!

DUS is particularly good on many hotels giving you (or selling for an eur or 2/day in quite cheap hotels) this HotelKombi ticket, it is valid in the whole of VRR that includes popping into NL: by train Venlo/Arnhem, by bus many more. The full list of such HTLs can be found on the site of Rheinbahn.de, the local transit operator. Around HBF=main station there are streets full of hotels.
Essen also has a few-there the operator is Rurbahn. And the IC-hotels also offer it anywhere-Duisburg, Dortmund. But Iám not very enthusiast about these hotels. If you want tipical british style: premierinn.de has also arrived, incl. DUS and a few other towns, but they do not give out these free tickets. But they do the tipical british free cf/T in room-otherwise quite uncommon here. Tipical german is also that when there is a messe=business fair, prices skyrocket high for hotels. But due to covid most of these have been cancelled.
This add-on is however as said above ONLY valid with longer term seasonal tickets-I think minimal 1 month. This is stated somewhere in the tipical german overlong unreadable conditions.
TIP: IF you go for a long weekend and with someone else: you can buy a VRR-ticket 2000 online for 1 month, this can start any day, buy for just a very cheap zone, as this ticket is valid for 2 persons and also VRR-wide sat/sun/hol and any day from 19.00. The cheapest ones cost around 60 eur, not valid before 9.00 mo-fr. With these you can add the 6.80 simple onward out of VRR. On times when its only valid in 1 zone, you can buy a VRR zusatzticket (about 3 eur, or in a 4-pack) and then travel all VRR to/fro the chosen zone. Thus this applies mo-fr from 9.00-19.00 OR indeed you can then also add the einfach weiter. EW is NOT a ride-at-will, it should be only valid for 1 logical trip from start to destination in the shortest time possible-no breaks, detours or zigzags allowed. But checks on this are very hard to do.
For the VRS area there were such tickets also in KÖLn, but these are currently suspended due to covid. However, in the BONN region you can buy for a lower price as the normal VRS-tickets Bonn Welcome Region Cards-for city, city XL or whole of VRS. Offered by tourist office.
The touristy area south-east of VRR is Sauerland and most hotels/pensions etc there give you a free Sauerlandcard, also valid on transport in this quite wide area.
You probably know that all these tix are for the trains only valid in NAHverkehr=local, not the fancy all-white ICE and IC.
VRR is since a year or 2 plagued with enormous train delays and lots of construction works/replacement lines.

Einfachweitertickets are valid with weekly and monthly seasontickets even for one zone but Kombitickets have to be valid for the entire network. Many exhibition and sportstickets do qualify as they are valid in the whole VRR, AVV, VRS or Westfalentarif, but some of the touristy travelcards are only valid in a particular city. You could buy a weekly ticket for Bonn and use Einfachweiter, but not with a BonnWelcome Card which is only valid for Bonn.
Smallprint can be tricky as some restrictions apply to certain tickets only. Kombitickets for exhibitions and sports are only valid from 4hrs before the event starts untill 3am the next day.
You can buy season tickets and Einfachweiter on mobile phones but some older ticketmachines only sell coupons that require a separate Kundenkarte (Customercard, similar to a photocard for the old Travelcards in London). Some outlets may sell weekly tickets for any consecutive seven days while older software issues Monday to Sunday tickets only.

Seems a bit complicated, is it really good value? I should seek a cheap hotel and buy a train ticket separately if necessary.

Coalition negotiations are taking place in Berlin, the greens want all hotel visitors to pay for 'free' travel on vbb trains, buses, trams. Could make $€nse financially if many pay but do not travel.

The cheapest weekly ticket is currently around €20 plus 6,80 per Einfachweiterticket, which may be cheaper than a single fare and has no offpeak- or route restictions except the ban on longdistance trains (IC/EC/ICE/Thalys). There are many other options including Intercitysavers, daytickets and splitting tickets, all with their own advantages and restictions. Some tickets are valid for more than one passenger, a few ones like Euregiotickets are even more complicated.

There's a wealth of information here, thank you. True that it's complicated, not much the EinfachWeiterTicket but the "Basis Ticket" that it links to.

I know of no better source of understanding this stuff than railforums.co.uk so I may post some specific example questions.

It seems to me that Germany are very quick to "penalty fare" passengers and the opportunity to regularise a situation onboard at low cost may not be possible.

There are very few conductors on the suburban and commuter trains and often none at all, and we have no ticket barriers or platform checks either, so any option to buy on board would be an invitation to free rides. It used to be different on Intercity, but they introduced an additional fee some time ago and plan to terminate that altogether, since most people can buy tickets online these days.
Legally the 60€ penalty fare is just a more expensive ticket, there will be no legal proceedings unless you refuse to pay or get caught multiple times. Ticket inspectors usually issue an invoice which has to be paid within 14 days or so and many transport companies offer a reduction under certain circumstances.
There are currently trials for an app-based check in & check out system where you pay a fixed fee of €1,50.plus 0,25 per km direct distance between start and terminus, which may be consideraby cheaper than zonal or routed fares. It is expected to roll out as 'eezy nrw' from December, but i have not tried it yet.
