Most likely this can be resolved without you ending up with a conviction, but some context would be helpful. At this stage we have no idea whether you were stopped and you didn't hold the correct tickets, or whether someone else was stopped but gave your details and you know nothing about this...
They presumably have no evidence that you have travelled using the tickets you have purchased. You may therefore not want to respond.
I would hope you could have worked that one out. Selecting the correct railcard would be advisable - and maybe buying your tickets from a different retailer.
Lose the excuse that you were unaware of the railcard expiring and that this isn't your fault. Railcards existed long before emails existed and yet we still knew they expired. When you bought the Railcard you knew it lasted for one year. and of course it was you who gave that email address...
I struggle to understand that someone can believe that you don't need some kind of "Railcard" to take advantage of the Railcard prices. It's even less credible that you believed you could still select the 16-17 Railcard option when you were 18.

I don't understand why the gateline staff didn't simply open up the gate to check if there was a weekly ticket in there and also why the ticket office staff didn't also suggest that when the OP and his mum went to the ticket office soon after being issued with the penalty fare.

Have you any evidence that this has ever occurred in a similar situation and what evidence would they use showing that the tickets had been used by someone who didn't have a valid railcard?
Hardly an "error" if you buy a ticket which covers no part of your journey and is in a different direction. Unless you mean a "serious error of judgement".

I suspect that the problem is that you have stayed in the UK for more than a year - which is how the railcard expired (unless you bought it before you arrived). There are many similar threads on this forum and no reason why you won't be able to settle this with the Train Operating Company...
They are only going to be able to track your ticket purchasing if they have some common identifier. So if Greater Anglia have your email address, then they can ask ticket retailers to provide details of tickets purchased on an account which also has that email address. If they have your 16...

Jail - 0% chance (that's definite)
Fine and criminal record - 5 - 10% chance (that might be an over-estimate based on most threads on here)
Fine (not technically one but in the sense of an out of court settlement payment so no criminal...
Did that email give you an opportunity to upload an image of your valid railcard? If not, is there a missing communication from SWR (either not sent or not received) giving you an opportunity to evidence that you had a valid railcard at the time you were stopped?
No need to use MS Print, you can use whichever PDF editor you have but just make sure you print as a PDF, and then use the new PDF. Don't simply save the redacted PDF document.
