If you're travelling there by train, it's nearly 5 hours each way to reach Grosmont. If that's you're only option, then I'd look at staying overnight in Whitby. Alternatively, it would probably be easier, quicker and less restrictive to get the train to Scarborough and get the bus to Whitby from there, but it would still be a long day.

Whitby-Pickering is a great trip though. If you need to stay overnight, then it will be cheaper away from the peak summer season.

With the scarcity of trains from Middlesborough to Whitby, to pick up the NYMR at Grosmont, possibly travel to York and then on the Scarborough line to Malton and a bus from there to Pickering?

If you're not set on the NYMR specifically, you could probably get to Great Central Railway (presuming you've done that one though), Severn Valley or East Lancashire Railway much easier and have just as good a time and spend more time on the actual trains.

The coastliner from Leeds/York calls at Pickering on its way to Whitby and is only £2

Ive done day trips a couple of times from the South Coast to Whitby via the NYMR. It needs careful planning. Sometimes its better to go to York and get the bus straight to Pickering its a short walk across the town centre from the bus stop. The alternative is to catch the train to Malton on the Scarborough branch where the same bus calls at a interchange outside the rail station. Coming south Ive always found it better to leave the bus at Malton. The bus from the outskirts of York is tedious and slow because of anti road traffic measures.

As stated by rail to Grosmont is a long day even if the timings work reasonably. Should there be a delay or cancellation you risk worst case stranded. Heading for Pickering will be a shorter time and has more options.

If rail connections at York are reasonable Malton will be quicker by train. However then a bus to Pickering or if poor timings even a Uber. Hence overall as suggested by @SeanG the Coastliner bus from York may be just as quick as well as cheaper.

Should you decide on overnight staying at Scarborough might work better than Whitby. You could go to Whitby for a few hours on the bus from Scarborough and by dropping back a bus have an hour at Robin Hoods Bay. Then next day bus Scarborough > Pickering and after your NYMR trip bus Pickering > York.
OK you do not use your rail ticket one way York <> Scarborough but while bus fares are capped I would consider insignificant. This presumes a Nottingham / Chesterfield to Scarborough return is cheaper than a Nottingham / Chesterfield to York return plus a single York > Scarborough
