Planning an off-peak day return trip today from St Albans (perhaps the 12:41hrs) to Leagrave, but wanted to break my journey at Luton. Is break of journey possible on their £7 off peak day returns?

Yes, so long as you are only breaking it that day and not overnight

It's valid to break your journey but be aware that the ticket probably won't work the barriers at Luton and you'll need to be let through manually.
