The last time I used it the OBS did indeed say split tickets via Croydon were not valid, not that all split tickets aren't allowed.
Depending on how they said it, it may be correct.

Point to point Single/Return tickets do indeed require the train to call. If one of the tickets is a Season and/or Travelcard, then there is no need for the train to call.

If anyone is charged under circumstances under which they shouldn't be, then please do let us know. So far, our record of demanding refunds from GTR due to such matters has been 100% successful, though we've actually had very few instances of forum members having experienced this (but many more have been threatened and "let off").

In theory, the NRCoT states when splitting with zonal tickets (such as a Travelcard) you should use a boundary zone ticket or a ticket to/from the last station covered by the zones for the journey being made.
The second option is more difficult for the London-Brighton line as some trains leave the Travelcard area after Coulsdon South whereas for others it's after Purley.

If you plan to use a train which doesn't stop between Croydon and Gatwick, the information you'd need to choose a valid point-to-point ticket isn't included in the public timetable and isn't displayed in the station.

London - Brighton trains normally run on the Quarry line so they don't pass Coulsdon South, however they occasionally run on the Redhill line if there is engineering works or disruption.

To be pedantic, they pass Coulsdon South at a high level with the station clearly visible, but of course, not through the platforms.

It's obviously the case, but my wording was chosen based on what the Gatwick Express site itself states, as wrong as it may be.

The real solution is boundary zone tickets, where available, but I'm sure staff will see sense with either ECR or CDS tickets in combination with a Travelcard.
