London to Torquay via Cardiff

Next Saturday I am travelling from Paddington to Torquay on an off peak return (already purchased). I intend to visit to Cardiff on the outward journey and to purchase a day or off peak return from Bristol Parkway to Cardiff (staying on the same train from Paddington). Will this allow me to return direct from Cardiff to Bristol Temple Meads or will I have to return via Bristol Parkway?

WIth a combination of return (day or period) tickets the train must call where the split is in the ticket. However you could in theory travel Cardiff Central to Bristol Parkway changing at Filton Abbey Wood and your Paddington to Torquay ticket would be ok to join at Filton Abbey Wood so what you're proposing is absolutely valid.
