Has any body experienced this journey as a side jaunt from Munich!
Munich to Fussen via Buchloe
Fussen to Lindau Reutin via Kaufbeuren
Looks like a more scenic stop off while heading in to Austria.
Next day would be Lindau Reutin to Salzburg to Attnang Puchheim to Halstatt

Not been to Fuessen (or Oberstdorf - which gets you a 218-hauled IC if you time it right), but Kempten-Lindau is scenic (as BTW is Kempten-Reutte i T-Garmisch).
The ECEs take the flatter route through Memmingen now, sadly.

Think you'll be lucky to fit all that into day 2. And if you are starting from Manchester I would add a day onto my pass

Lindau-Feldkirch-EC163-Stainach-Irdning-Hallstatt would be a superb run, and IMO makes better use of the Panorama Car; or to save the annoyingly long wait at Stainach, go round via Salzburg to Attnang.

ive tried B-Europe + DB and its looking like learning how to in/out with Interrail as the prices are too high and availability is not good
ill have to read up on Man in Seat 61 and other peoples experiences to navigate the Interrail Passholder In / Out experience
The other options are too expensive.

Passholder fare is EUR38 in SP or 30 in Standard plus booking fee 2EUR.
What day are you travelling?

You won't get to Freiburg until 14:53 on EC9 so trying to go to Seebrugg, Villingen, then across to München and Lindau is basically impossible.

You can just about get to Seebrugg, spend an hour there and then go to Lindau via Donaüschingen and Friedrichshafen, arriving 23:25. I'd recommend staying somewhere like Freiburg itself if you want to fit everything in, then continue the next day.

At various different times, yes. The Germany bits are pleasant but not spectacular IIRC, being Alpenvorland rather than true alpine! Austria ups the game a bit. Know nothing about Reutin (only been through on a night train) - I used the terminal station at Lindau.

Reutin is a suburb on the mainland - through trains no longer use the terminus, though the locals from Austria do. The island is well worth a stop,
