Proposed route :

Wembley Pk (Met line) - Finchley Road (walk) - Finchley Road and Frognal (Overground) - Strattfiord (Central Line) - Leyton.

Just some confusion on the tapping sequence here. Will I need to tap in at Finchley Road and Frognal as well as tapping on the Pink validator at Stratford (when changing onto the central line ) ? TFL Fare Finder only mentions touching the pink validator at Stratford but I am assuming i also have to tap in at Finchley Rd and Frognal overground ?

You always need to touch back into the system if you have left it, otherwise you will be charged for leg 1 (in this instance Wembley Park to Finchley Road), then have a separate incomplete journey ending at Leyton.

Having touched out at Finchley Road, and walked to Finchley Road & Frognal, you need to touch in.

The avoiding zone 1 fare is looking for a touch in / out at Finchley Road / Finchley Road & Frognal (or the two West Hampstead stations) and a single touch on the pink reader at Stratford.

West Hampstead is a more pleasant walk in my view and shorter if I recall.

You must touch in when entering either of the overground stations. You must touch the pink validator at Stratford. You must touch out at Leyton to complete the journey.

It is, but the shorter walk is compensation for having to use the slower Jubilee line, as the Met doesn't stop at West Hampstead.

As others have said you'll need to touch out at Finchley Road and touch back in when you enter at Finchley Road & Frognal. As long as you do this within 20 minutes this will activate what is known as an Out of Station Interchange which will join both legs of the journey up into one.

Same also applies if you decide to interchange at West Hampstead.

Unless you have a lot of luggage I find it quicker to take the Met to Finchley Road and double back to West Hampstead particularly if you are at the front of the Met train and having gone up the stairs and changed platforms at Finchley Road you walk towards the other end of the platform to be at the front of the northbound Jubilee line train.
