Is that the one that was on @timmydunn's Architecture of the Railways series a few months ago?
No, they were the 'excursion' platforms which are used for stabling, especially by Hull Trains. Platform 1 is at the country end of platform 2, outside of the overall roof, however it has its own roof (shared with part of the 'excursion' platforms). It is probably long enough for a 3-car 170.

How will having a very long walk to (or from) Platform 1 “improve the experience for rail passengers”?

It doesn't, when the platform was in use it was a pain turning up with minutes to spare then finding you had to walk another 100 yards to Platform 1. If TPE didn't litter the the station with spare/cancelled 185's there would be ample platforms already.

The proposal is to extend the platform by 7 metres. As well as passenger trains this will enable more overnight stabling meaning a total of 7 passenger platforms, 4 stabling platforms and 1 other road at the station. The station is a busy place and there is more need for stabling following the recent (and continuing upgrade) of nearby Botanic Gardens Depot.

Work has been ongoing on Platform 1 with the signal moved from the overhead gantry to a standalone signal further away from the platform end presumable ready for its extension. Listed building consent was apparently approved in principle back in September.

Plans for new signage and equipment on Platform One of Hull Paragon Station mark the next step in efforts to bring it back into use after more than 30 years. It comes as the listed building consent needed to do the works was approved in principle in September. The new plans set out the details of what is set to be installed on the platform to make sure it can properly function once it returns to use."

I was wondering if extra platform space would be required if the promised electrification of the route to Hull and more frequent trains ever happened.

The government has suggested these extra trains might one day come to Hull:

" Bring Hull into Northern Powerhouse Rail, electrifying and improving the line speed between Hull to Leeds and Hull to Sheffield. This will cut the journey between Leeds and Hull from 58 to 48 minutes; from Hull to Manchester from 107 to 84 minutes. This will enable 2 fast trains an hour to Leeds, double trains between Hull and Sheffield from 1 to 2 per hour, and enable capacity to double. "

Were any platforms given up on the bus station side when the Interchange was created?

This picture in the office is dated 1984, the 2 short bays behind what is now Platform 7 are where the access road is now, the rest of the Platforms went when the branches closed

Platform 1 at Paragon will be Shang Ri La to get to, compared to 17a it Leeds.

There are far more awkward platforms around the network.

Prior to the Interchange there were two short (Original truncated) platforms - 2 & 3. These had been well out of use prior to this (Track lifted). The only other passenger platform to go was the original Platform 1 which again went many years previously. There's not a lot of space on the North side of the station. You could re-instate 3 (Other side of what is now 7) as there is space to take a line but this would eat in to the car park and access road into the station. It's possible. All are well away from the bus bays depending on how far you would take it (Begin to clash with the coach bays on the opposite site of the bus bays). This is why bringing the 'new' Platform 1 back into use is so important especially to create additional stabling on a evening when there are at least 20+ units around (Including 3x Hull Trains).

There are a few car parking areas around the station, for example by Margaret Moxon Way / Park Street junction, and around Colonial Street, and Spring Street.
In theory, if a multi storey car park could be built around here, then it could free up land space for a platform alongside the current platform 7.
One barrier would be ownership of the land - obviously there is an initial cost to purchasing land and building a car park. But later on it is a potential source of income.

I think it would be nice to have at least one platform that is long enough to accommodate the full length of a ten carriage (or 2 times 5 carriage) train.

Last night, this was the first unit into platform 1 to stable, Northerns 170475

Has anything used it yet? Can’t find anything on RTT
It has no booked moves, but once the opening publicity for the first train has been done, it will be used throughout the day, at Hull we do our own station workings, which are different to the NR ones, and I think we may be unique in the fact we tell the Signalbox where to put the trains, and they ask us where we want any late-runners putting
